Aloo Gobhi is Indian for Cauliflower which is the Gobhi, and Aloo is the potatoes. The first thing we do with this dish is add the oil and let the oil heat. Add about a teaspoon of Cumin. So I wait, once the seeds start sizzling, I add in chopped potatoes, shake in Turmeric, ground Cumin and Coriander. It is important to use the spices as freshly ground as possible. That is what gives the food the flavor. Add in cauliflower. You toss to coat. This is some ginger garlic paste, dried red chilies. Shake in some red chili powder. This is usually to taste, as is the salt. Lastly I add in some chopped tomatoes and green peas.
You basically keep stirring the dish until the vegetables are evenly coated with the spices that you have added, and once it reaches that point, you cover and let the dish cook on low heat. About halfway through, I check my Aloo Gobhi to see how we are doing. As you can see, it is getting there. The cauliflower is cooked. It is important that the vegetables are very soft in this dish. So about 20 minutes later, you are done with the Aloo Gobhi. The potatoes are soft as are the cauliflower. You turn off the heat and your Aloo Gobhi is done.
